Traditional bacon jam recipes are made by slow cooking the bacon and the onions with vinegar, brown sugar and spices, and then putting then ingredients in a food processor to make sort of a relish. For this keto bacon jam recipe, I opted to keep things chunkier by skipping the food processor. I thought it gave it a nicer texture.
Stir in the maple syrup, brown sugar, coffee, apple cider vinegar and spices and bring all of that to a boil and then add the cooked bacon pieces back in the skillet. Let it boil for 1-2 minutes and then transfer the Bacon Jam to a slow cooker. Cook on High for 4 hours UNCOVERED, stirring occasionally.
Return the bacon to the skillet and add the coffee and water. Cook on medium-high for 30 minutes, stirring regularly. Stir the balsamic vinegar and coconut aminos through and cook for a further couple of minutes. Allow to cool slightly and then spoon into jars.
