3. While the eggs cook, mix the biscuit mix and water in a small bowl. Once you have a dough, split it in half to make two biscuits. Or make one giant biscuit if you'd like. Add the biscuits to a piece of parchment paper or microwave-safe plate. Microwave for 45-60 seconds. (You can add a bit of cooking spray or egg wash to the top for more of a golden brown finish.)
4. After the biscuits have cooled, use a knife to cut them in half and place half of the bacon, egg, and cheese mixture in between each biscuit.
