1. Cut chicken into small cubes. Mix the chicken pieces with soy sauce, vinegar, baking soda and corn starch. Set aside and marinate for 10-15 mins.
2. Prepare the stiry fry sauce by mixing all the ingredients in a small bowl. Set aside.
3. Add 1-2 Tbsp oil in a pan and stir fry the cashew nuts till the color changed into lightly brown and crispy. ( Or your can use the roasted cashew nuts. ) Remove from pan and set aside.
4. Reheat the pan into medium high heat. Drizzle ½ tbsp oil, add the marinated chicken pieces and stir fry for 1-2 mins till the chicken change into nice color. Remove from pan in a bowl and set a side.

Kick the heat up to medium-high, add the 2 tablespoons of oil, when heated through, add the marinated chicken and sprinkle with red pepper flakes. Cook the chicken for 1-2 minutes or until about halfway done. Then, add the mushrooms, carrots, white onions and continue to cook until the chicken is no longer pink and the veggies are cooked. Drizzle with the prepared sauce, stir to combine. When the sauce has thickened, add the scallions and the cashews to the skillet. Serve warm over jasmine rice.
