Combine the chicken and marinade in a large bowl.
Sweetener: Brown sugar (or white granulated or coconut sugar) is more traditionally used for lemongrass chicken. But I like to use maple syrup as a more natural alternative. Soy-sauce: I always use low-sodium, but any soy sauce will work. Oil: Any neutral-flavored oil, such as avocado oil or olive oil, will work. Garlic: Lotsa fresh garlic!
I poured half of the lemongrass marinade over some chicken thighs and put it away for a couple of hours, allowing all those flavors to come together. When ready, all you have to do is transfer it all to the grill or a grill pan, brush some more marinade over it, and grill away.
