1. Season the steaks generously with salt and pepper. Heat oil in a large Dutch oven pot, over medium-high heat, until shimmering. Add the steaks and brown for 4-5 minutes per side. Remove and reserve.
2. Lower the heat to medium. Add butter to the pot and, once melted, add the sliced onions. Cook, resisting the urge to stir too much so they can brown, until they are softened and lightly browned/caramelized, about 8-10 minutes.
3. Add the garlic and red pepper and cook for another 3-4 minutes until softened and fragrant.
4. Cut the seared steaks into 1 1/2 to 2-inch cubes and transfer to a bowl. Toss with flour. Add the beef back to the pot, stirring to combine. Add the red wine and cook until reduced. Then, add the beef broth, paprika, brown sugar, bay leaves, tomato paste and crushed tomatoes.

1. Sauté your onions. Add either butter, oil or lard into a Duch Oven or a braising pot, sauté the onions for about 8-10 minutes, until nicely soft and almost caramelized.
2. Add chopped garlic and thinly sliced pepper and cook for 2 – 3 minutes.
3. Add beef. Cut your meat into tiny cubes of 1/2". Once you add the beef to the pot, cook it for about 5 minutes, until no longer pink.
4. Add Hungarian Paprika and tomatoes. This is a very important step that can make or break your Pörkölt! Paprika can burn easily and if you let it cook for too long it will become bitter and your beef stew won’t taste as good. So, just add the paprika and mix it well. Then add tomato and/or tomato paste if using, mix it again and move on to your liquid base.
