1. Combine the marinade ingredients (up until the bay leaves) in a large glass bowl or a dish with a lid. Add the chicken and mix well. Cover and refrigerate for 2 hours or up to overnight (the longer the better).
2. If possible, give the chicken a stir from time to time to unsure it marinates equally. You can also transfer everything into a large freezer bag as that makes it easier to manipulate.
3. Heat oil over medium-high heat in a very large skillet. When the oil is hot, add the chicken to the pan (reserving the marinade) and brown it on all sides.
4. Stir in water/broth and reserved marinade and bring to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and sauce is slightly reduced, 20-25 minutes. See notes if you’d like a thicker sauce.
