This Low-Carb Apple Crisp is a great choice for a Keto Thanksgiving dessert or Keto Christmas dessert! Preheat oven to 350 degrees. Peel and dice the zucchini and dice the green apple. Place in a skillet. Add erythritol, vanilla extract, cinnamon, nutmeg and ginger.
To the apples, add the filling ingredients of cinnamon, nutmeg, sweetener and coconut flour. Mix to combine. To make the topping, combine the sweetener, almond flour, salt, cinnamon, nutmeg and vanilla and stir until combined. Add the butter to the mixture and "cut" it in using a pastry cutter. You can also use a fork.
Bake at 350 F for 45-50 minutes or until zucchini is tender. A pie crust can be added along with baking in a pie pan to make a keto friendly Dutch apple pie. Chayote squash, jicama, or yellow squash can be used for the mock low carb apples instead of zucchini.
