In a large mixing bowl, add the almond meal, coconut and almonds or other nuts. Mix to combine. In a small saucepan, add the butter, xylitol and vanilla.
These low carb Anzac cookies are best eaten on the day they are cooked as they will soften overnight – which is great if you love chewy cookies! Preheat your oven to 150C/300F. For chewy ANZAC's, bake in a 160-degree Celsius oven for 10-12 minutes. The biscuits will be soft when you take them out of the oven, but will firm on cooling. Allow to cool for 5 minutes on the tray before transferring to a wire rack to cool completely. If you prefer them crunchy, it’s so easy to do that without even changing the recipe!
