I’m very happy with these sugar-free oatmeal cookies. While there are no actual oats in the cookies, the sliced or flaked almonds do a nice job of mimicking the look and texture of the real thing. The texture is crunchy and tender with a little “chew”, which is lacking in most low carb cookies.
Oatmeal raisin cookies are usually popular due to the chewy dried fruit texture and sweetness. However raisins as discussed are not low carb/ keto friendly. If you love an oatmeal cookie with additional mix-ins though, we’ve got you covered.
However, you can still make low carb oatmeal cookies with almond flour and a few other ingredients as a substitute. What are those other ingredients you ask? We chose to use a combo of oat fiber and unflavored beef gelatin to give both the texture and the flavor of oatmeal cookies. We also used slivered almonds to mimic the texture of oats.
If you added ⅔ cup or 100 grams of oats, your net carbs would be 7.6g per cookie. It's the combination with the almond flour that keeps the carb count in check. My sugar free keto oatmeal cookies come in at less than a third - 2.1g net carbs per cookie.
