Step 1. Place 1 dough ball into your palm and flatten it using your fingers to create a round puri-like shape. Step 2. Place the aloo filling in the center of this flattened dough. Step 3. Now close the kachori by bringing the edges together and seal the ends. You may remove any extra dough at this point. Step 4.
This kachori also makes a mouthwatering appetizer that can be served with Green Chutney as chaat. Mix the flour, sooji, salt, lemon drops and oil. note lemon should be just 3-4 drops, we are not adding to flavor, lemon is added to give the crispness.
Let the filled ball sit for three to four minutes before rolling. It helps spreading the filling evenly. Set the kachoris on a surface with the seams facing up. Using the base of your palm, slowly flatten them into about three inches in diameter, or use the rolling pin roll the kachori with light hand.
Raj Kachori is considered the King of Kachoris. It was first created in Bikaner and has now spread throughout India. Potatoes which are the main ingredient of this dish, are one of the few vegetables that can be grown on Mars. It is believed that the Kachori was born in Rajasthan, after which it travelled to various other states in India.
