    1. Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
    2. In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
    3. Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
    4. Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.

    2. Reduce the heat to medium and add the butter. When the butter has melted, add the honey, brown sugar, maple syrup, vanilla and salt. Bring to a boil and let cook, stirring, until it combines into a thin syrup, about 1 minute.
    3. Add the toasted dry ingredients back to the skillet and stir quickly, keeping the granola from clumping too much, but ensuring the dry ingredients are all coated in the syrup, about 1 minute. Serve warm, or allow to cool for 30 minutes, at which point the granola will become crispier.
    4. Sprinkle the granola over the cold yogurt and garnish with blueberries.

You can cook it longer if you want but it's good to go at 5 minutes. Let cool and transfer to a container with a tight lid. I keep mines in the pantry and it lasts just fine! For freshness eat within 1 week (2 weeks at the most).
