1. Position an oven rack in the center of your oven and then preheat the oven to 350F degrees. Line 2 baking sheets with parchment paper or silicone liners.
2. In a large bowl, beat the peanut butter, brown sugar, egg, and baking soda together with an electric mixer on medium, until well blended.
3. Drop level teaspoons of dough onto the prepared baking sheets, spacing them about 1-1/2 inches apart. (This is a small amount since you want enough for 60 cookies.)
4. Bake until the cookies are puffed and starting to lightly brown around the edges, 8 to 10 minutes.

1. Preheat the oven to 350 F and line a large cookie sheet with parchment paper or a silicone baking mat.
2. In the bowl of a stand mixer, or by hand, combine the bananas and peanut butter until fully incorporated. Add in the oats, and stir to combine. If using chocolate chips, add and stir in.
3. Using 1 tablespoon at a time, drop cookies onto the cookie sheet, about 2 inches apart, flattening slightly. Cookies do not spread much.
4. Bake for 14-16 minutes; or until just beginning to brown around the edges. Mine were perfect at 14 minutes. Allow the cookies to cool for a few minutes in the pan before removing and cooling completely on a wire rack.
