To make a liqueur, take the prepared strawberries and put them into a primary fermenter, such as a food-grade plastic pail or a stone crock. Then add enough water to barely cover the strawberries. Add to this mixture the sodium bisulfite, acid blend and wine tannin as called for in the recipes.
