No sugar and no raw onion! Slice the pickling cucumbers into rounds. You can choose crinkle cut or smooth round cuts. Set the sliced cucumbers in a colander. Sprinkle 1 ½ TB of table salt (not listed in ingredients) over the cucumbers and gently toss them to coat the slices in the salt.
You can really use any kind of cucumber, but the BEST pickling cucumbers are small with few seeds. You can often buy baby English cucumbers in the grocery store and these work great! Or, in early summer, get to a farmer’s market and buy small pickling cucumbers. They’re my first choice for making this keto pickle recipe.
