DirectionsStep1Sanitize all the equipment you will use: pot, jug, funnel, airlocks, spoon, etc. Follow the directions on the sanitizer package.Step2Heat 1/2 gallon of non-chlorinated water in the large pot on medium heat, do not boil. Add the honey and stir until it fully dissolves. Remove from heat.Step3Add the optional berries, fruit, raisins, and herbs to the one-gallon jug.Step4Using a funnel, pour the honey-water mixture into the jug.Step5Leave at least 2 inches of headspace at the top. Add additional cold water if needed.Step6Secure the lid and shake well.Step7When the temperature drops below 90°F, add 1/2 package of the yeast.Step8Again, cap the bottle and shake well.Step9You should see bubbles within the first 48 hours.Step10Store the jug in a dark and cool place, or cover it with a towel. It will take about 4-6 weeks to ferment.Step11It is ready when the bubbling has stopped or slowed to once every minute instead of every few seconds as it did initially.Step12The liquid will be clear, and the yeast will settle to the jug's bottom.Step13Do a taste test. 2. Heat ½ gallon of the water in a pot on medium heat. Once warm turn off the heat.
3. Potential Alcohol pre-test -- Do this step before adding yeast. Fill the hydrometer jar with must then float the hydrometer. Record the sugar level (Brix) or the estimated alcohol content. You should have about 22.5 Brix or 13-15% alcohol. (see the table below for how I track)
4. Now the initial fermentation process begins. Within 24 hours, bubbling will start in the jug and airlock. For the first day, I generally leave the jug by the kitchen sink, just in case the bubbling is a little too aggressive. Yes! I have had some sticky eruptions, a pain to cleanup.
