1. In a large pot, melt 3 Tablespoons butter and cook the chopped onion until translucent and golden brown. Whisk in the flour. Gradually stir in half and half, water and chicken broth.
2. Add the chopped cauliflower and heat to boiling. Reduce heat to medium low and allow the cauliflower to cook until tender about 15 minutes.
3. In a blender or immersion blender with the center of the top removed to allow steam to escape, blend the soup in batches until smooth. Return to the pot.
4. Heat soup to medium heat and add in dijon mustard and cheese and stir until melted. Serve with optional toppings.

2. Sprinkle the flour over the onions and cook for 1 minute, whisking to coat the flour. Whisk in the half-and-half, then the chicken broth. Season with the salt and pepper.
3. Add the cauliflower and bring to a boil. Once boiling, reduce the heat to medium-low and cook, stirring occasionally, for about 15 minutes until the cauliflower is soft and cooked through.
4. Blend the soup using either an immersion blender or by transferring part of the soup to a blender with the lid tilted to an angle to allow steam to escape. Work in batches until all of the soup is smooth, then return it to the pot.
