Remove the top and end.Thinly slice - approximately 1/2 cm (1/5 inch) thick.Step3Peel the onion and remove the tip. Cut the onion in half, and thinly slice into half moons. Discard the root end.Step4In a large bowl, add the zucchini, onion and salt. Cover the bowl with plastic wrap, and place in the fridge for 4 hours.Step5Tip the zucchini and onions into a colander and drain the excess liquid. Discard the liquid.Step6In a non-reactive saucepan (See Note 5), place the vinegar, sugar and spices.On a medium heat, stir to dissolve the sugar. Once the sugar is dissolved, simmer the liquid for 2 minutes.Step7Place the zucchini and onion slices into the warm, sterilised jar.Step8Remove the saucepan from the heat, and carefully pour the pickling liquid into the jar with the zucchini and onions.Step9Seal the jar immediately, and allow to cool on the bench before placing in the refrigerator.     1. Wash your zucchini; trim and discard ends. Slice into chips or spears, as desired. Set aside.
    2. Divide the seasonings between 3 clean pint-sized mason jars. Divide the zucchini and dill sprigs evenly between the jars.
    3. Combine all brine ingredients in a medium saucepan and place over MEDIUM-HIGH heat. Bring mixture to a boil
    4. and then remove the pan from the heat and carefully pour the hot brine into the jars over the zucchini and fresh dill. Fill to the top of the jar, leaving about ½-inch of head space. Tightly secure lids and shake the jars. Allow to cool slightly on your kitchen counter for about 30 minutes before placing jars in the refrigerator. Refrigerate for 24 hours or more before eating.
