These quick & easy yam fries are a great alternative to french fries {a big weakness of mine!} & are so easy to make! I served them with turkey burgers...Yum!
Place your sweet potato on a cutting board, and using a shark knife, cut the sweet potato down the middle vertically into thin slices. Stack the slices on top of each other then cut the sweet potato into french fry pieces that are about 1/4-inch thick.
If you want to eat a smaller portion of sweet potatoes to limit your carbs, consider adding them cooked and diced to soup or salad. You can also slice a cooked sweet potato in half and top it with a protein and perhaps another low-carb ingredient for a quick meal.
