World Peace Cookies (The Best Recipe!) - Rasa Malaysia

Estimated Reading Time: 2 mins1. Sift the flour, cocoa, and baking soda together.
2. Working with a stand mixer, preferably fitted with a paddle attachmenet, ot with a handy mixer in a large bowl, beat the butter in medium speed until soft and creamy.
3. Turn off the mixer. Pour in the dry ingredients, drape a towel over the stand mixer to protect yourself and your kitchen from the flying flour and pulse the mixer at a low speed about 5 times, a second or two each time.
4. Take a peek-if there is still a lot of flour on the surface of the dough, pulse a couple of times more.; if not, remove the towel. Continuing at a low speed, mix for about 30 seconds more, just until the flour disappears into the dough-for the best texture, work the dough as little as possible once the flour is added, and don't be concerned if the dough looks a little crumbly.
5. Turn the dough out onto a work surface, gather it together and divide it in half. Working with one half at a time, shape the dough into logs that are 1-1/2 inches in diameter.
6. Getting ready to bake: Center a rack in the oven and preheat the oven to 325 degrees F. Line 2 baking sheets with parchment or silicone mats.
7. Using a sharp thin knife, slice the logs into rounds that are 1/2 inch thick. (The rounds are likely to crack as you are cutting them-don't be concerned, just squeeze the bits back onto each cookie.)
8. Bake the cookies one sheet at a time for 12 minutes-they won't look done, nor will they be firm, but that's just the way they should be. Transfer the baking sheet to a cooling rack and let the cookies rest until they are only just warm, at which point you can serve them or let them reach room temperature.

Drape a kitchen towel over the stand mixer to protect yourself and your kitchen from flying flour and pulse the mixer at low speed about 5 times, a second or two each time. Take a peek — if there is still a lot of flour on the surface of the dough, pulse a couple of times more; if not, remove the towel. Continuing at low speed, mix for about 30 seconds more, just until the flour disappears into the dough — for the best texture, work the dough as little as possible once the flour is added, and don’t be concerned if the dough looks a little crumbly. Toss in the chocolate pieces and mix only to incorporate.
3. Turn the dough out onto a work surface, gather it together and divide it in half. Working with one half at a time, shape the dough into logs that are 1½ inches in diameter. Wrap the logs in plastic wrap and refrigerate them for at least 3 hours. (The dough can be refrigerated for up to 3 days or frozen for up to 2 months. If you’ve frozen the dough, you needn’t defrost it before baking — just slice the logs into cookies and bake the cookies 1 minute longer.)
4. Center a rack in the oven and preheat the oven to 325°F (160°C). Line two baking sheets with parchment or silicone mats.

Reviews: 7Category: DessertCuisine: FrenchEstimated Reading Time: 5 mins1. In a small bowl, sift the flour, cocoa and baking soda.
2. In the bowl of an electric mixer using the paddle attachment (or using a hand mixer), beat the butter brown sugar and granulated sugar until the mixtures is soft and creamy, about 3 minutes. Use a spatula to scrape the sides of the bowl, add the salt and vanilla and mix until blended. Turn off the mixer, then add the flour mixture all at once, mixing first at low speed. As the dough starts to come together, beat the dough on medium-low speed until the dough forms chunky pieces. Add the chopped chocolate and mix to incorporate. The dough is usually crumbly and sandy — do not worry, it will come together as you work the dough!
3. Turn the dough out onto a work surface (I like using a silicone mat. If you don’t have one, don’t worry!). Use your hands to gather the dough together, don’t be afraid to work it, even if crumbly, it will eventually come together. Divide in half and continue to work one half of the dough, pressing and rolling, forming it into a log 1 1/2 inches in diameter. Repeat with the other half of the dough. Wrap the logs in plastic wrap and freeze for at least 2 hours or refrigerate for at least 3 hours, or overnight.
4. To prepare the cookies for baking, preheat the oven to 325°F with a rack placed in the center. Prepare two baking sheets with parchment paper.
