1. In small bowl combine flour, baking powder, baking soda, cinnamon and salt.
2. In a medium bowl whisk together egg with milk and oil. Add dry ingredients to bowl, mixing gently until smooth (don’t over-mix or waffles will be more dense instead of fluffy).
3. Allow mixture to rest while waffle iron is heating up.
4. Add 1/4 cup batter to preheated waffle iron; cooking for 3-4 minutes. Every waffle iron is different so cook according to manufacturer’s instructions.

2. Beat egg whites: Beat the egg WHITES in a clean bowl with electric beaters until stiff peaks form.Combine batter: Add wet ingredients to dry ingredients and stir just to combine (4-5 stirs should be enough!). Add the beaten egg whites and carefully fold in just until incorporated. Do NOT overmix. Batter will be thick. If it's too thick, add a few extra tablespoons club soda.
3. Bake waffles: Cook the waffles according to your waffle iron's instructions. I scoop the batter with a cookie scoop to make less of a mess.
4. Serve: Serve the waffles hot right out of the waffle iron - that's when they're the crispiest!
