1. Combine all the dough ingredients in the bowl of a stand mixer, and mix with the paddle attachment until somewhat combined (or just mix by hand with a wooden spoon). Change to the dough hook and knead on medium low for 10 minutes. The dough shouldn’t be sticky, just slightly tacky to the touch. Place the dough in a ziploc bag and let the dough rise for 30 minutes.
2. Preheat the oven to 450 degrees F, and lightly grease a baking sheet with vegetable oil. You could also do parchment paper if you can find one that’s rated high enough (most parchment papers I’ve seen only go up to 420 degrees F).
3. Remove the dough from the bag and place onto a clean countertop. Divide the dough into 8 pieces (just cut it with a knife).
4. Whisk to combine the warm water and baking soda and heat in the microwave for 1 minute. FYI it’s not going to dissolve completely, and that’s okay.

1. Combine the yeast, 1 teaspoon of the sugar, and the warm water in a small bowl. Let rest for 10 minutes to activate the yeast. It should look a little bit foamy.
2. In a stand mixer fitted with the dough hook, whisk together the flour, the remaining ½ cup of sugar, and the kosher salt. Add the oil and the yeast mixture, turn the mixer on medium-low speed, and mix for about 5 minutes (until the dough is smooth).
3. Transfer the dough to a greased bowl. Turn to coat the dough with grease on all sides. Cover and let rest in a warm place until doubled in size, about 1 hour.
4. Near the end of the rising time, preheat the oven to 425° F. Line two baking sheets with parchment paper. Set aside.
