1. Pat chicken breasts dry with paper towls and season with salt and pepper. In a large non-stick skillet over medium-high heat, heat oil until shimmery. Working in batches, brown chicken 3-4 minutes on each side until golden brown. Transfer seared chicken to a 4-qt slow cooker and set aside.
2. Saute onion, and garlic cloves in remaining pan drippings in skillet over medium-high heat until lightly golden and caramelized. Reduce heat to medium and stir in flour. Slowly whisk in wine and chicken broth until sauce is smooth. Bring sauce to a simmer over medium heat, stirring occasionally until thickened. Remove from heat and season with salt and pepper to taste.
3. Pour sauce over chicken in crockpot and sprinkle with thyme and parsley. Cook chicken on low heat 4-5 hours or until chicken is tender and registers 165F degrees on a thermometer.
4. Serve chicken and garlic sauce hot with pasta or rice. Enjoy!

1. Preheat oven to 425 degrees F.
2. Remove the neck and giblets from the whole chicken, rinse with cold water and pat dry with paper towels. Place in a roasting pan and season the inside of the chicken with 1/2 teaspoon of the kosher salt and 1/2 teaspoon of the freshly ground black pepper. Stuff the chicken with the onion, celery, carrot and 6 garlic cloves. Truss legs with cooking twine and tuck wings under bird.
3. In a small bowl, mix the butter, the remaining kosher salt and black pepper and the tarragon until blended. Gently work your fingers under the skin of the chicken breasts and rub half of the butter mixture under the skin, then rub the rest of the butter over the top of the chicken skin.
4. Scatter the remaining garlic cloves around the chicken and pour the wine or sherry into the pan.
