Heat a large heavy bottomed pan over medium high heat. When hot, Add 2 teaspoons oil and swirl to coat. Sear/brown roast on all sides and place onto a large rimmed sheet pan or roasting pan and make the herbed crust. Smear the top and upper sides of the eye roast with Dijon mustard.
It can be roasted whole or cut into steaks. Eye fillet has a thin membrane called silverskin which needs to be removed if your butcher has not already done so. Use a sharp knife to carefully remove all the membrane. If left on, it will shrink during cooking causing the fillet to curl up.
