2. Set nonstick ridged grill pan over medium heat. Place patties on pan and cook until browned and instant-read thermometer inserted into side of burger registers 165°F, 4 to 5 minutes per side.
3. Meanwhile, to make dressing, stir together Gorgonzola, buttermilk, mayonnaise, pepper, and remaining pinch salt in small bowl. Serve burgers in sandwich thins topped with dressing, tomato, and lettuce.
4. Serving size: 1 burger and 1 tbsp dressing
