A Weber Smokey Mountain hot-and-fast brisket won’t have a good smoke ring, the bark won’t form as well, and the color won’t be good and it will taste less smokey because it would have spent less time in the smoker.
Lump charcoal works well in the Weber Smokey Mountain, but you can also use briquettes. There are dozens of different brands and we could debate all day about which brand is the best. I’ve seen a few experiments on YouTube where pitmasters had a burn off to test the different brands.
