So this low carb watermelon drink is super easy to make. I started with a quarter of a medium sized watermelon. I cut out the flesh and blended it in my blender until it was pureed. I then used a paper towel lined colander inside a larger bowl to strain out the pulp.
Use 1 of the small pieces to prepare this drink. Cut the watermelon into chunks and remove all the seeds. Pour the blended watermelon into a ½ gallon pitcher and add the cup of sugar. Stir vigorously until the sugar has dissolved. Serve lightly chilled or over ice. Garnish each glass with a mint leaf.
