Ukoy Kalabasa is a popular Filipino shrimp and vegetable fritters served with a spicy garlicky vinegar dip. This ukoy recipe is made of shrimp and kabocha squash (kalabasa). There are many variants of ukoy when it comes to the vegetable used. Aside from squash, bean sprout, carrot or sweet potato can be use too.
Instructions In a large bowl, combine egg, cornstarch, flour, water, fish sauce, salt and pepper. Add bean sprouts, carrots, and shallots and gently stir to combine. In a large skillet over medium heat, heat about 2 inches deep of oil. On a large spoon, place about 2 to 3 tablespoons of the ukoy mixture and press 1 to 2 shrimps on top.
This okoy is made with kalabasa. There's no togue in sight! Mix together flour, cornstarch, water, egg and garlic in a large bowl. Season with salt and pepper. In a separate bowl, season shrimp with salt and pepper. Then add carrots, kalabasa, and shrimp to the mixture. Mix until well combined. Heat oil in a pan over medium heat.
Rinse under cold running water and squeeze to remove excess liquid. In a large bowl, combine egg, cornstarch, flour, water, fish sauce, salt, and pepper. Whisk together until well-blended and smooth. Add papaya, kalabasa, shallots and green onion to batter and stir to combine. In a large skillet over medium heat, heat about 2-inch of oil until hot.
