The recipe is low in carb, quick to make, and gluten-free that is perfect for any season of the year. Tom Yum soup is one of the most well-known soup in Thai cuisines. I have always loved this soup since I was a kid.
Tom Yum Paste – there are a few great brands on the market that are vegan-friendly and gluten-free. Add a tablespoon or two into each cup of vegetable stock to create a delicious Tom Yum soup. I normally add more lemongrass or lime leaves (you can get this from Amazon) or tamarind juice to the mix.
This is a vegetable version of the classic Thai Tom Yum soup. You can find lemongrass, kaffir lime leaves, and galangal (a close relative of ginger) at any Asian supermarket. If you can't find the lime leaves, you can add extra lime juice to taste, but do try to find the lime leaves because they make a big difference.
