1. Combine grainy mustard, dijon mustard, honey and salt in a bowl to make a marinade.
2. Then, brush the marinade over the pork chops, making sure to cover them completely. Leave the pork chops to marinade for at least 30 minutes, or up to 2 hours (or cook them immediately if you don't have time to wait).
3. Heat some oil or butter in a pan on medium heat, and add the marinated pork chops. Cook for about 3-4 minutes on either side, or until the pork chops have cooked through. The meat should be completely white, and the chops should have an internal temperature of 63 C / 145 F. I use a meat thermometer to check if the meat is done.
4. Serve honey mustard pork chops while still hot with your favourite sides.

1. Mix the flour, salt and pepper on a plate. Dredge the cutlets in the mixture and shake off excess. Set aside.
2. Heat a heavy bottomed pan such as cast iron skillet over medium-high. Add 1 tbsp olive oil and 1 tbsp butter. Sear 3 or 4 thin pork chops at a time, for just over 1 minute per side until they just begin to turn golden. Remove from pan. Repeat with the rest of the olive oil, butter and chops.
3. Lower the heat to medium and to the same pan add the cream, mustard and honey. Whisk until combined and bring to simmer. Add the seared pork chops to the sauce and cover the skillet partially with a suitable lid or simply a round baking sheet that fits. Simmer for 5-6 minutes to cook the pork chops through. Garnish with fresh thyme or dill and serve.
