SCATTER the onion and garlic in the middle of a sheet of heavy-duty aluminum foil large enough to generously wrap around the meat. Lay the brisket on top and rub all sides with the dry rub. Pour the bottled smoke and Worcestershire over the meat. SEAL the foil around the meat. Carefully place the foil pack in a large roasting pan.
Mix the garlic powder, onion powder, paprika, salt and pepper in a small bowl and sprinkle over the brisket, patting it down all over the meat. Heat the avocado oil over medium high heat in a Dutch oven.
Use a dry spice rub of your choosing. You will need about 1/2 cup dry rub seasoning, again depending on the size of your brisket. I usually make my own because it’s way more economical and it’s so hard to find one without sugar.
