1. For the Duxelles:
2. To make the Duxelles: Add mushrooms, shallots, garlic, and thyme to a food processor and pulse until finely chopped. Add butter and olive oil to a large saute pan and set over medium heat. Add the shallot and mushroom mixture and saute for 8 to 10 minutes until most of the liquid has evaporated. Season with salt and pepper and set aside to cool.
3. For the Beef:
4. To prepare the beef: Tie the tenderloin in 4 places so it holds its cylindrical shape while cooking. Drizzle with olive oil, then season with salt and pepper and sear all over, including the ends, in a hot, heavy-based skillet lightly coated with olive oil - about 2 to 3 minutes. Meanwhile set out your prosciutto on a sheet of plastic wrap (plastic needs to be about a foot and a half in length so you can wrap and tie the roast up in it) on top of your cutting board. Shingle the prosciutto so it forms a rectangle that is big enough to encompass the entire filet of beef. Using a rubber spatula cover evenly with a thin layer of duxelles. Season the surface of the duxelles with salt and pepper and sprinkle with fresh thyme leaves. When the beef is seared, remove from heat, cut off twine and smear lightly all over with Dijon mustard. Allow to cool slightly, then roll up in the duxelles covered prosciutto using the plastic wrap to tie it up nice and tight. Tuck in the ends of the prosciutto

1. Put all (or some--you may need to do this in batches, depends on the size and power of your food processor) the duxelles ingredients into a food processor. Process until small pieces result. The goal is to achieve a finely chopped texture, not puree the mushrooms.
2. Lay a sheet of wide plastic wrap (or two sheets of regular plastic wrap, side by side, overlapping by several inches) on the counter.
3. Heat oven to 400° Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

1. For the Duxelles: Add the mushrooms, onion, garlic, and thyme leaves to a food processor and pulse until finely chopped. Add the oil to a large skillet and set over medium high heat. Pour the food processor mixture into the pan and cook for 8 to 10 minutes, stirring frequently, until most of the liquid has cooked out. Season with salt and pepper and set aside to cool.
2. For the Beef: Place a heavy bottomed skillet over medium high heat. Using kitchen twine, tie the tenderloin in 4 places. This will help it hold its shape while cooking. Season the beef all over with salt and pepper. When the skillet is hot, add the oil and sear the beef all over to brown the meat. Do not sear the beef for more than 5 minutes total, so just a minute on each side. Remove the beef to a plate, take the pan off the heat, and set aside for later (do not clean it).
3. Lay out a large piece of plastic wrap, about 18 inches or so, and evenly space out the prosciutto so that it covers most of the plastic wrap. You want it spread out enough to fully wrap the beef when we roll it up. Spread the duxelles evenly over the prosciutto, then sprinkle with salt, pepper, and a few extra thyme leaves.
4. Trim the twine from the beef, brush the tenderloin with the Dijon mustard, then place the beef on the duxelles. Use the plastic wrap to wrap the entire beef tenderloin in the duxelles and prosciutto, then twist the ends of the plastic wrap tightly so the beef holds its log shape. Refrigerate for 30 minutes.
