2. In a large frying pan, heat the olive oil over medium heat and brown the lamb shanks on all sides, seasoning with salt and pepper as you go. Put to one side.
3. Fry the chopped vegetables and saute for 5 minutes, scraping any meaty bits from the bottom of the frying pan. Put the vegetables on the bottom of the slow cooker.
4. Add the red wine to the frying pan and bring to a boil, again scraping any scraps from the bottom of the pan so you get all of the flavour into the wine. Let simmer for 1 minute and add to the slow cooker.

3. In the same pan, fry the onion, carrot, celery and garlic until soft and fragrant. Add the herbs and tomato paste and cook for 30 seconds before adding the red wine and stock. Allow to come to a simmer then add the lamb shanks back into the sauce.
4. Cover with a lid and place in the oven. Allow to braise slowly for 2-3 hours until the lamb is soft and succulent. Check on the lamb shanks half-way through cooking and add more stock if necessary.
