1. Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
2. In a microwave-safe bowl or measuring cup, stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F (it will be warm but not hot to the touch) and the butter is completely melted.
3. Pour the liquid mixture into the large bowl of a stand mixer. Then sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
4. Add in 3 1/2 cups of flour (not all of the flour) and the salt.

1. Pour the milk into the bowl of a standing mixer, and add the sugar and yeast. Stir to combine and then let sit for about 5 minutes to let the yeast begin to come alive. (*See note) Whisk in the egg, egg yolk and 6 tablespoons melted butter.
2. Fit your mixer with the dough hook, add 5 cups of the flour and mix on low speed until the dough begins to come together. Slowly add enough of the remaining cup of flour so that the dough forms a soft, slightly sticky ball. This might take the entire remaining cup or only a bit of it. What you're looking for is a soft, smooth ball of dough that clings to the dough hook, does not stick to the sides of the bowl, but does stick slightly to the bottom of the bowl.
3. Once the dough has come together, sprinkle in the salt. Continue to knead the dough for about 8-10 minutes. At this point, the dough should be very soft and smooth.
4. Brush the inside of a large bowl with a thin layer of the melted salted butter and dump the dough into the bowl. Brush the top of the dough with a bit of the melted salted butter and cover with plastic wrap. Let the dough rise at room temperature for 1-2 hours, until it's doubled in size. 1. In a medium saucepan over medium-low heat, combine the milk, 1/2 cup sugar, 5 Tablespoons butter and salt. Heat until mixture is warm and butter is melted (it will start to slightly bubble around the edges of the pan), remove from heat and cool to lukewarm (this is important, because if it's too hot, it will kill the yeast). Meanwhile, in a medium bowl, combine the warm water, 1 teaspoon of sugar and yeast. Allow to sit for 5 to 10 minutes or until bubbly and frothy. If the yeast mixture does not get bubbly and frothy, start yeast mixture over.
2. Add three cups of flour to the bowl of your stand mixer. Pour warm milk mixture into the bowl and mix, using the dough hook, until combined, scraping sides of bowl with a rubber spatula as needed. Add the yeast mixture and beaten eggs and mix until combined. Gradually add remaining two cups of flour, 1/2 cup at a time, or until dough starts to pull away from the sides of the bowl as you mix. Dough should still be slightly sticky to the touch. Don't add too much flour or your rolls will be dry. You may or may not need the entire 5 cups of flour.
3. Cover bowl with a towel and allow dough to rise until doubled in size. When dough has risen, punch down. Form dough into balls (if it's a little too sticky, spray your hands with cooking spray). I use about 3 oz. of dough per dough ball. Place on a large greased sheet pan, spacing 2-3 inches apart. Cover with a towel and allow to rise for one hour or until doubled in size.
4. Preheat oven to 400 degrees and bake for 12-13 minutes. Tent rolls with foil the last few minutes of baking. The rolls brown pretty quickly, so tenting them with foil is a must. When done baking, brush with remaining 2 Tablespoons of melted butter. Makes around 16 large rolls.
