I looked at a bunch of coconut curry Thai shrimp soup recipes on the internet and took a shot at my own Whole30 version. The final version is loosely adapted from Allrecipes as well as a few other recipes I found online.
Whisk in the curry paste and then the coconut milk, stock, and pepper. Bring it all to a boil then reduce heat and simmer until the soup thickens slightly (about 10 minutes). Stir in the shrimp, lime juice, and cilantro and season with salt and pepper to taste.
