1. Soak the bean thread noodles in a large bowl of room-temperature water for about 10 minutes before preparing the rest of the ingredients. (Drain the noodles using a strainer just before cooking).
2. Prepare the sauce by combining the water, oyster sauce, soy sauce, fish sauce, sugar, and white pepper.
3. Heat 2 tablespoons of cooking oil in a wok over medium-high heat. Pour the beaten eggs into the wok and leave untouched for about 30 seconds before scrambling them. Remove from wok and set aside.
4. Add a splash of cooking oil to the wok if it's too dry, then stir-fry the chicken. When almost cooked all the way through, add 1 teaspoon of soy sauce to the chicken.

1. Marinate fish in 1/2 Tbsp of the fish sauce while you prep other ingredients.
2. In a mortar & pestle, pound together garlic, cilantro roots, white peppercorns, Thai chilies, and spur chilies until it resembles a rough paste.
3. In a wok, heat a little vegetable oil over medium heat and add the herb paste. Saute the paste until it starts to turn golden. Turn the heat up to high then add the fish and toss to mix with the paste briefly. Add the remaining fish sauce, sugar, and a splash of water; toss to mix. Add fingerroots and peppercorns, toss to mix, then let the fish cook without stirring until done, flipping the pieces half way through. Add a little more water if it becomes dry.
4. When fish is done, turn off the heat and quickly toss in Thai basil.
