1. Place all the ingredients, except the xanthan gum, in a saucepan over medium heat. Whisk together.
2. Bring to the boil and reduce by about ¼ of a cup (keep a close eye on the sauce as it is prone to boiling over).
3. Sprinkle the xanthan gum over and whisk in.
4. Continue to boil until the sauce has thickened, then remove from the heat.

6. Give it a stir and cover the pot with a lid. Bring it to a gentle simmer over medium-low heat, about 3 minutes.

8. Off heat. Let it cool to room temperature before packing it to a mason jar. Store it in the fridge and best use it in 2-3 weeks.
