Swerve Sweetener is by far my favorite keto friendly sweetener. In fact, I love it so much that all of my keto cookie recipes are made with Swerve Sweetener! Swerve makes a number of keto friendly sugar substitutes including a granular, confectioners, and even brown sugar. I love baking with Swerve because it measures like table sugar.
Scoop cookie dough by the tablespoon full and roll into a ball. Coat ball of dough by rolling in a bowl with 1/4 cup Swerve granular. Place cookie dough onto baking sheet, spacing about 1½-inches to 2 inches apart. Lightly press each cookie down with the bottom of a glass. Bake for 8 to 10 minutes or until lightly browned.
Since Swerve Confectioners is not grainy like the granular, it helps the cookies stay extra soft and chewy. In addition, these keto chocolate chip cookies are loaded with cream cheese to add a bit of extra softness and flavor. The flour I use for these cookies is a mixture of almond and pecan flour.
