1. Place the onion, garlic, ginger, oil, garam masala, cumin, cardamom, and chili in the bowl of a food processor and puree until a paste forms. Transfer the mixture to a large pot and set the burner to medium heat. Cook, stirring often, for 10 minutes until the mixture darkens and becomes aromatic. Add the tomato paste and cook for another 1-2 minutes.
2. Add the broth, brown sugar, and lime leaf to the pot. Scrape the brown bits up from the bottom of the pot and simmer for 10 minutes.
3. Add the yams, cauliflower, carrot, tomatoes, salt and pepper to the pot. Allow it to come to a boil over medium heat, and then reduce heat to medium low. Cover and simmer until vegetables are tender, stirring occasionally, about 8-12 minutes. Add spinach and cook until wilted, about 1 minute. Discard the lime leaf and season with additional salt and pepper as needed. Garnish with fresh cilantro leaves and serve with cooked basmati rice.

1. Wash and peel the skin of sweet potatoes and chop it into medium cubes. Soak it in water to avoid de-oxidation. Cook these chopped sweet potatoes on stove till they are soft but not mushy. You can also use micro wave oven to cook the potatoes. Once the sweet potatoes are cooked, drain the excess water and keep it ready
2. Finely chop the onions and garlic and keep it ready. Slit the green chillies into thin slices. Heat oil in a pan and add mustard seeds. When the mustard seeds starts to sputter, add cumin seeds and split urid dal and saute them till the dals turns golden brown color. Add broken red chillies and fry for 5 seconds
3. Add green chillies, chopped onions and curry leaves to the pan. Add a pinch of salt to cook the onions evenly. Add turmeric to the onions and saute them till they are transparent
4. Add chopped garlic and keep the flame in medium low and allow the onions and garlic to cook nicely. Then add chopped Tomatoes
