This low sugar raspberry jam is so simple to make and tastes incredibly fresh. Use a potato masher or pastry cutter and lightly smash the raspberries. Aim for a blend of 30% "very smashed" and 70% "kinda whole". Measure 3 1/2 cups of raspberries into a mixing bowl. Add 1 cup of sugar and 1/3 cup of freezer jam pectin to the raspberries.
Stir in 1 box of Sure-Jell Less or No Sugar needed Recipes Fruit Pectin. Add one cup water and while stirring constantly, bring mixture to a boil over medium high heat. Once mixture is boiling, boil and stir for 1 minute. Remove from heat. Quickly add crushed or mashed berries (all four cups) and stir for 1 minute or until thoroughly mixed.
You can store it in any freezer safe container (it doesn’t have to be a glass jar, that’s just what I choose to use). One batch of jam will fill close to 4 pints and lasts up to one year in the freezer! First gather your ingredients, including raspberries, sugar, 1 box of surejell fruit pectin and water.
For Splenda you would want to use a 1:1 ratio, so 1 cup of sugar would be 1 cup of Splenda. To replace with Stevia, you would use 1 tsp of powder or liquid concentrate to 1 cup of sugar.
