Making keto-approved candied yams with marshmallows was a real challenge for me. Both marshmallows and sweet potatoes are high in carbs. After a few tweaks, I finally discovered the best way to make marshmallows that worked even for baked recipes!
1 cup light brown sugar, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, 1 pinch salt, 2 tablespoon butter Spread the yams in an even layer, cut any large pieces in half if desired, then sprinkle the mini marshmallows over the yams.
So while this recipe is usually called candied yams, the vegetable used is more commonly referred to as a sweet potato. And you do not want to confuse it as the “Yams” with the white inside are often dry and starchier and this is not a great recipe to use them for.
