1. Preheat oven to 300 degrees F. In a large mixing bowl, beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking soda, cream of tartar, and salt. Beat mixture until combined, scraping sides of bowl occasionally. Beat in egg yolks and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.
2. Shape dough into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheets.
3. Bake in the preheated oven for 12 to 14 minutes or until edges are set; do not let edges brown. Cool cookies for 1 minute on cookie sheet. Transfer cookies to a wire rack and let cool.

2. Preheat the oven to 350°. Place about 1/2 cup white sugar in a large, shallow bowl. Using a small ice cream scoop, shape the balls into about the size of a walnut. Roll the balls in the sugar and place on a parchment-lined baking sheet, several inches apart from each other. Flatten with a glass dipped in sugar. This part is key; try to really flatten these as thicker cookies don’t get as crisp and that’s really what separates these cookies from other, less superior ones!
3. Bake for 10-12 minutes, until crisp. If you are baking more than one cookie sheet in the oven at a time, you will want to bake closer to 12-13 minutes. Cool on the sheet for about 5 minutes, and transfer to cooling racks to cool completely.
4. You can freeze these cookies with great success. Thaw for about 30 minutes before baking and pick up at the “rolling in sugar” step.
