Whisk the egg whites until foamy and stiff peaks forms. Add granulated sugar to the egg white mixture and mix well. Keep this bowl aside. At this stage, start preheating the oven to 160 degrees Celsius.
2. Take a fresh clean bowl and beat in the egg yolks. Keep on stirring until the yolks turn thick and lime yellow in colour. Now add 1/3 of the egg white mixture into the yolks and whisk completely. Now transfer this mixture of egg yolks and egg whites back to the bowl of remaining egg white mixture.
3. Add 1 tsp orange zest, cream of tartar and cake flour to the egg white-yolk mixture and fold until all the contents are properly incorporated and no lumps are left.
4. Spread the mixture onto a non-greased cake tin and even out the surface using a spatula. Throw the cake tin in the oven and bake the cake for around 45 minutes.
