Serve this simple Japanese beef sukiyaki stir-fry recipe over thin Japanese noodles or rice, if desired. Heat oil in a large skillet or wok over medium-high heat. Brown beef in hot oil, then stir in soy sauce, MSG, broth, and sugar. Mix in onion and celery, and cook until tender. Stir in bamboo shoots, green onions, mushrooms, and water chestnuts.
Although Sukiyaki is a Japanese “national” food like sushi, it is different by region. In eastern Japan (Kanto), they use a premixed sauce called “Warishita” made from sugar, soy sauce, mirin, etc. to cook with meat and vegetable, but in western Japan (Kansai) we put mainly sugar and soy sauce directly onto meat in the pot to season.
Pour half of the sukiyaki sauce you made (1⅓ cups) and 1 cup dashi (or water) into the pot. Add the vegetables, tofu, and other ingredients to the pot (keep the udon for later). The ingredients should be partially submerged in the broth, about two-thirds of the way; add more sauce or dashi (or water) if necessary.
Some of the ingredients we put in Sukiyaki (or Shabu Shabu) like napa cabbage and shungiku may not be easy to find in where you live. If so, use available mushrooms and leafy vegetables such as cabbage, spinach, and bok choy. You can substitute Leeks and scallions/green onions for Tokyo Negi.
