1. Peel, core, and coarsely chop pineapple. Place pineapple in a food processor and pulse 2-3 times until it's very fine, but not completely pureed. (Alternately, start with canned crushed pineapple.)
2. Place pineapple in a jam pot or deep saucepan.
3. For every cup of crushed pineapple, add 1/2 to 2/3 cup sugar. A medium pineapple yields about 3 cups crushed pineapple and would require 1 1/2 to 2 cups sugar.
4. Bring the mixture to a boil over high heat, stirring to prevent scorching. Cook on high for 25 to 30 minutes until the mixture thickens.

2. Lower the heat to medium-low and keep cooking, stirring frequently, for an additional 35 minutes or so.
3. Use an immersion blender or a potato masher to mash the fruit. Mash it all the way or leave large chunks. It’s up to you.
4. Add the juice of one lemon and 5-6 lemon seeds. Stir them in and keep cooking until the jam gels (for me it was about 45 additional minutes but this might change depending on how juicy your fruit was to begin with).
