1. Grease a standard 9x5'' loaf pan (I also like to line the bottom of the pan with parchment paper to make sure the loaf doesn't stick).
2. Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.
3. In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture and stir to combine.
4. Gently stir in melted butter. Bake at 350 degrees F. for 35-45 minutes or until a toothpick inserted into the center comes out clean.

Next, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. When this is blended, you can fold in the bananas and optional chopped nuts.
4. Bake your bread for 65-70 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan.
