1. Cook your chicken as directed if if is not already cooked. Also, cut the chicken into 1-1 1/2" chunks. Set it aside where it can stay warm while we prepare the sauce to go over the chicken. Have the chicken in a large bowl or baking dish as we will be stirring the sauce into it later on.
2. We will next make the sauce. In a saucepan over medium heat, stir together the soy sauce, sugar free ketchup,chili paste, brown sugar alternative, sesame oil, ginger and garlic. Allow this to cook for a few minutes in order to blend together. Then add the broth and stir in 1 teaspoon of the thickener (Xantham Gum or cornstarch or other). Bring this to a boil, stirring occasionally or as needed. One it begins to boil you can turn the heat down and allow this to simmer for two minutes, stirring as needed. If this seems too thin, add in the remaining thickener.
3. Remove the sauce from the stove and transfer it to the chicken, stirring the sauces into the chicken to cover the all of the pieces or chunks of chicken evenly. Note: if you are serving this with broccoli, you can also add the broccoli before or while you stir in the sauce.Lastly, sprinkle the sesame seeds over the chicken and serve.
