1. Mix self-rising flour, butter, sugar, eggs, vanilla extract, and salt thoroughly in a bowl; beat at least 5 minutes. Refrigerate dough at least 2 hours to overnight.

3. Roll dough out on a floured work surface using a lightly floured rolling pin; cut cookies out with cutters. Place cookies onto baking sheets.

3. Drop them into the sugar, then place the balls sugar side up onto the baking sheets, leaving about 2" between cookies; they’ll spread as they bake., Bake the cookies for 8 to 10 minutes, until the edges are lightly browned.
4. The cookies will puff up and look soft, but they’ll fall and become crisp/crunchy as they cool., Remove the cookies from the oven.
