2. If you want to use active dried yeast in this recipe (recommended for a puffy crust and lovely bread flavor), you must reactivate the yeast. In a bowl, add the yeast with 1 teaspoon of sugar (don't worry, the yeast consumes all the sugar, and no sugar is left at the end of the recipe!). Cover with lukewarm water (think bath temperature, not burning water, or it would kill the yeast). Stir and set aside 10 minutes until the yeast is activated.
3. You can make the dough the day before and store it in the fridge in an airtight container or freeze the prebaked pizza base.

Calories: 166 per servingCategory: Appetizer, Dinner, Lunch1. Prepare the optional sauce and set it aside while you work. Preheat the oven to 425 and prep a baking sheet with parchment paper. If you are not using a baking sheet, simply set out a large sheet of parchment paper to prepare the pizza on. This is a good recipe to bake on a lower rack in the oven so that the crust can evenly bake.
2. In a medium microwave safe bowl, microwave the mozzarella cheese and the cream cheese for 90 seconds (or until melted), stopping every 30 seconds to stir. When the ingredients have melted remove the bowl from the microwave and allow the ingredients to cool for a few minutes.
3. Next, stir in the eggs and the flour. When you are able to, use your hands to to help mix the dough. This dough is not like a normal dough to work with as it has a wetter consistency. I have a couple of tips shared above that can help if needed. Allow the dough to sit for a few minutes so that the cheese absorbs the coconut flour.
4. Next, transfer the dough to the prepped baking sheet or parchment paper. Using a spoon, spread the mixture out into a round or rectangle shape until it’s about ¼” thick. Use a fork to poke holes into the dough to allow for the dough to rise properly during the baking process (we are not using a leavener). Bake the pizza crust for 8-10 minutes, until golden brown.

Total Time: 20 minsCategory: Main CourseCalories: 117 per serving1. Preheat the oven to 425 degrees F (218 degrees C). Line a baking sheet or pizza pan with parchment paper.
2. Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well incorporated. (**See notes for alternative to the microwave.)
3. Stir in the beaten eggs and coconut flour. Knead with your hands until a dough forms. If the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.
4. Spread the dough onto the lined baking pan to 1/4"or 1/3"thickness, using your hands or a rolling pin over a piece of parchment (the rolling pin works better if you have one). Use a toothpick or fork to poke lots of holes throughout the crust to prevent bubbling.

Rating: 4.2/5(77)
Total Time: 1 hr 15 mins1. Prep your pizza pan for nonstick. I use parchment paper as it makes baking and transferring the pizza easier.
2. Start my stirring together the yeast and warm tap water in your mixing bowl. Allow this to sit for a few minutes in order to activate the yeast.
3. Next, add the flour to the bowl. We will start by slowing adding 2 cups of the flour. Then we will any additional later on if the dough seems loose or sticky. Also at this time, add the salt to the bowl.
4. I suggest using a dough hook attachment with your mixer if you have one. Use a slow to medium speed on the mixer as well. If your dough seems to not wanting to form a bowl after a minute of mixing you can add a tablespoon of additional flour to the bowl as it mixes. You can repeat this last step as needed.
