1. Preheat your oven to 180 Celsius/356 Fahrenheit.
2. Blend your eggs with the coconut oil, vanilla and powdered sweetener of choice, if using. I used my food processor, bit this can be done with a stick blender.
3. Sift in the coconut flour and combine.
4. Your dough should be soft, but not too sticky. If needed, add a little more coconut flour to get the right consistency. You can also stick the dough in the fridge for 10 minutes to cool it down - this will make it easier to roll out.

1. Preheat the oven to 350 degrees F. Spread the walnuts on a sheet pan and toast for 15 minutes or until they are golden in color. Let cool, then rub in a tea towel to remove much of the loosened skin.
2. Place the hemp seeds and walnuts into a food processor and process until finely ground. Add the melted coconut oil and fiber syrup (or honey if not low carb) and pulse to distribute the ingredients. (This also makes a great snack if rolled into balls.)
3. Add the cream cheese and sweetener to a bowl and whip with a hand mixture until loosened. The, add the heavy cream and whip until light and fluffy. Finally, add the goat cheese and whip again. Use right away or cover and place into the refrigerator until needed. If keeping in the refrigerator overnight, whip to loosen before spreading into the tart crust. (If piping, place 1/3 of the filling into a piping bag to decorate the top. I place the strawberries first and decorate around them.)

With a fork, generously prick the sides and bottom of crust. Bake until crust is lightly toasted, about 10 minutes or more. Remove from oven and let crust cool to room temperature
2. Prepare the tart filling: While crust is cooling, combine mascarpone and 6 tablespoons of Swerve Sweetener. Hull the strawberries and cut them into 1/4-inch slices.
3. Finish the tart: Once crust is cool, spread mascarpone in an even layer over the crust. Arrange strawberries evenly over the top in a decorative pattern. Slice and serve immediately.
