This low carb keto Strawberry Jam is delicious on just about everything. It only takes about ten minutes and four ingredients for an amazing jam. Add strawberries to a small stockpot. Smash a bit with a potato masher to get the juices flowing.
Chop the strawberries and place them in a saucepan together with the water. Bring to the boil (lid on), then turn down the heat medium and let it bubble away for 15 minutes. Only add the lemon juice if you want to store the jam for longer than 1 week - it prevents the growth of bacteria.
In our jam recipe, strawberries are the only sweetener involved, and therefore the carbohydrate content is really minimal. You get a perfect 3 grams of carbohydrates only together with 1 gram of Fiber for a portion. This brings you to a total of 2 grams of net carbs for two tablespoons of homemade sugar-free strawberry jam.
If the strawberries do not contain enough natural sweetness, add up to 1 tbsp of powdered erythritol or another sweetener of your choice. Instead of pectin, use 1 tsp of ground chia seeds to fully set the jam. Fill into a sterilised container and store in the fridge.
